BABKA WITH MARMALADE

babkpa

Babka is a type of sweet bread reminiscent of our milibrod or kozinak.
It originates from Poland and is known all over the world in different variants depending on tastes.
It can be made in a chocolate version.. with jam, with dried fruit literally with whatever you want ๐Ÿ˜Š

The best thing is that the cotton remains soft for days, and for the taste, I leave you to try it once and you will surely want to make it again. ๐Ÿคฉ

BABKA WITH MARMALADE

Required:
๐Ÿ’œ 400 gr. flour
๐Ÿ’œ 5 gr. dry yeast
๐Ÿ’œ1 small teaspoon of pastry
๐Ÿ’œ 2 eggs
๐Ÿ’œ 50 g of sugar
๐Ÿ’œ 150 ml. warm milk (not hot)
๐Ÿ’œ50 gr. melted margarine
Peel of one lemon or orange

๐Ÿ’œ Marmalade / Jam, if desired, I put home-made plum jam because I love it. ๐Ÿ˜Š

Preparation:
Dry yeast is activated in a portion of warm milk with a teaspoon of flour and sugar.
Put all the necessary ingredients in a bowl, add the dissolved yeast and the rest of the milk.
Form a soft dough and leave to double in a warm place for 1 hour.

Then you knead it briefly and roll it out in a rectangular shape.
You coat it well with marmalade and roll it carefully like a roll. (Don’t skimp on smearing) ๐Ÿ™ƒ
You cut the roll from the top to get two parts from which the jam will “peek” โ˜บ
You roll it like a braid and put it in a loaf pan lined with baking paper.

Leave for another 20 minutes covered with foil and bake in a preheated oven at 190ยฐ for about 10 minutes, then reduce the temperature to 170ยฐ and bake for another 25-30 minutes until it gets a nice color and crust.

You wait for it to cool and you can taste.
Children love it with a glass of milk delight ๐Ÿ’œ

Well guys this is my favorite Turkish dish, I love it! ๐Ÿ˜Š
Lahmajun or Turkish pizza is their traditional recipe and something you can make at home.
It’s worth a lot!

LAHMAJUN ๐Ÿ‡น๐Ÿ‡ท

Required:
(for dough)
๐Ÿฅ™400 gr. flour (I used Caputto for pizza )
๐Ÿฅ™1 lie. salt
๐Ÿฅ™300 ml. warm water

(For filling)
๐Ÿฅ™400 gr. minced meat
๐Ÿฅ™ 2 onions
๐Ÿฅ™200 gr. Tomatoes
๐Ÿฅ™1 green pepper
๐Ÿฅ™ Half a bunch of parsley
๐Ÿฅ™ 1 teaspoon of salt and pepper
๐Ÿฅ™1 spoon of red pepper
๐Ÿฅ™2 tablespoons of tomato sauce (from the thicker one that is like puree)
๐Ÿฅ™1 tablespoon of vinegar
๐Ÿฅ™ 2 tablespoons of water

Preparation:
Mix the flour with the salt and slowly add the warm water, knead the dough.
You can knead it by hand or in a food processor.
Knead on a floured surface for about 5 minutes. until soft.
It is immediately formed as a roll about 30 cm. and 6 balls are cut from it.
They are covered with a cloth.

For the filling, it is best to chop all the foods finely.
โฃTo save time, it is best to chop the vegetables.

The chopped foods are placed in a bowl and all other ingredients are added.
Knead by hand just like dough.
The mixture should be smooth and without large pieces.
Cover and put in the fridge.

You take one of the balls and roll it out on a floured surface so that it does not stick to you.
If it sticks to you from above, add a little oil.

I rolled it into the size of a frozen pizza dough ๐Ÿ˜Š
Once you have rolled it out nicely, you can shape it into a circle with your hands. It is important that it is thin so that it is crispy, that is the difference from pizza dough.

Transfer the rolled crust to a baking sheet lined with baking paper.
โฃThis is important because it will be easier to put in the filling without it falling apart.

You put the filling on top of the dough and with the help of your fingers, pat it over the entire surface as well as at the ends.

Bake in a heated oven at 230ยฐ until golden brown.
About 10-15 minutes depending on the oven.

You repeat the same procedure with all the balls.
It is best if you have a large baking tray and bake two lahmajuna at once. ๐Ÿ˜Š
Serve with parsley, salad, a cup of ayran.
And I put a lot of lemon and it’s very tasty. Try it too ๐Ÿ˜Š

PIROCHES WITH POTATOES ๐Ÿ’›

You don’t know how much I’ve missed the kitchen and cooking latelyโ€ฆ but sometimes a person needs to restart and move forward ๐Ÿ™ƒ

With great measure, I suggest you to make these piroshki with potatoes, I’ve been planning to make them for a long time, but now it’s their turn ๐Ÿ˜Š
My mother used to make them very often and they are a nice memory just like that โค
Crispy on the outside and soft on the inside, fantasy!

PIROCHES WITH POTATOES ๐Ÿ’›

โ—Required
For the dough:
๐Ÿ’›700 gr. flour
๐Ÿ’›300 gr. Potatoes (about 3 medium sized potatoes)
๐Ÿ’› 4 egg yolks
๐Ÿ’›1 fresh yeast
๐Ÿ’› 200 gr. warm milk
๐Ÿ’› 100 gr. Margarine
๐Ÿ’›1 teaspoon of salt

For the filling:
You can fill them with whatever you want, I specifically put them for the occasion
๐ŸงกGrated salami
๐Ÿงก Grated cheese
๐Ÿงก Grated pickles

โ€ข For the upper part:
๐Ÿค 4 egg whites
๐Ÿค200 g breadcrumbs

First you boil the potatoes. When they are ready, mash them with a fork.
You add margarine and salt to the potatoes and mix everything well.
Dissolve the yeast in the warm milk and wait for about 5 minutes.
Put the flour in another bowl and add all the ingredients gradually.
(The egg yolks, milk with yeast and potatoes)
You knead a soft dough that does not stick. If necessary, you can add a little more flour, although I didn’t need it, it was enough.

You cut the crust not very thin and cut rectangles. (See right in pictures)
You put filling as desired and close them first from the top so that the filling does not leak out, then roll them like a roll.
PS Feel free to press the filling and form the piroshki with your hands so that the sides meet.
Arrange them in a greased tray and repeat the procedure with all of them in the same way.

Then dip them in egg white and then in breadcrumbs and fry them in heated oil on both sides until they become golden ๐Ÿ˜Š
They don’t take much time and you can fry more at once if you have a bigger pot.

โฃThis dose makes a whole tray of piroshki, if you feel like it, make half a dose.
โฃI suggest that you heat the cooking oil first and then reduce it so that you burn me quickly.

The other day I took a picture of your strawberries if you remember?
Well, I needed them for this miracle, I told you it would be worth it ๐Ÿ˜

I can’t tell you how happy I was with the result, they are so delicious and they look so good, it’s a miracle, I couldn’t wait to share them. ๐Ÿ“

This is a recipe for donuts that are neutral and can be combined as a salty variant, but I decided on this sweet treat and I was not wrong ๐Ÿ’ฏ

NUTELLA BURGER ๐Ÿฉ๐Ÿฉ๐Ÿฉ

Necessary ingredients for the donuts:
๐Ÿฉ500 gr. flour of occasion
๐Ÿฉ 100 ml. milk
๐Ÿฉ200 ml. yogurt
๐Ÿฉ50 ml. olive oil
๐Ÿฉ2 eggs
๐Ÿฉ1 dry yeast
๐Ÿฉ1 spoon of sugar

Preparation:
Dissolve the yeast in 50 ml. warm milk together with sugar and 1 tablespoon of flour, leave for about 15 minutes.
Then add the rest of the milk, 50 ml. (so it’s not cold) olive oil, yogurt and eggs. Mix and gradually add about 1/2 kg of flour. Knead and leave for 45 minutes covered with a towel.
Then the dough is rolled out on a floured surface 1 cm. thickness and take out with a round glass.

Put more olive oil in the pot and heat it to a higher temperature and then reduce it by half.
You take a circle and lower it into the olive oil, so that the bottom side of the circle is on top. Cover with a lid for a short time, when it starts to rise, remove the lid and repeat with all the doughnuts.
I will post a video so you can see how the donuts should turn out.

I didn’t like the first ones in frying because I immediately lifted the lid, be careful, then I realized my mistake and there was a result right away, but even if they don’t all grow, it doesn’t matter so much because the taste is the same and you can decorate them as you like ๐Ÿ˜Š

I arranged the finished donuts on napkins to absorb the olive oil, then cut them in half and filled them with nutella, sliced โ€‹โ€‹strawberries and banana.
WINNING COMBINATION ๐Ÿ’ฏ
You can also use marmalade, vanilla pudding, as a salty version, it’s your choice.

The donuts are hollow from the inside, not doughy and heavy at all, and crispy from the outside.

SUMMER SALAD with arugula

SUMMER SALAD with arugula

Required:
๐Ÿฅ— 2 bunches of fresh arugula
๐Ÿฅ— 1 peach nectarine
๐Ÿฅ—About 70 g. walnuts
๐Ÿฅ—Ripe figs (2-3 pieces depending on the size)
๐Ÿฅ—Gorgonzola blue cheese in cubes

For dressing:
4 tablespoons of olive oil
2 spoons of honey
๐Ÿฅ— 2 tablespoons of balsamic vinegar
๐Ÿฅ—Salt and pepper to taste

Preparation:
Cut the peach into moons.
(Not very thin)
Heat a grill pan with a little butter and put it to “seal”.
You also put the walnuts with the peaches on the butter to give them a touch.

Meanwhile, arrange the arugula in a salad bowl. Add blue cheese to taste, figs and peaches that have browned and softened a little along with the walnuts.
For the dressing, mix all the ingredients, stir well to combine and quickly pour over the salad.

It’s too simple to prepare, and I’m sure most of you have heard of it.
This is the French dessert Crรจme brรปlรฉe ๐Ÿฎ and I’m sure you will like it just try it ๐Ÿ‘Œ

Crรจme brรปlรฉe

โ— Required ingredients:
600 ml. Milk
4 egg yolks
40 g vanilla pudding
150 gr. Yellow sugar
60 gr. Butter

โ— Preparation:
Mix the pudding in 200 ml. milk together with 50 gr. sugar and add the 4 egg yolks.
400 ml. put milk on the fire to boil, add the mixture with the pudding and reduce the temperature, stir all the time until it thickens. Then remove from the stove and add the butter, stirring to melt.
Put the cream in the fridge to cool nicely.
Then cooled and mixed with a mixer briefly.

Arrange in small fireproof dishes and add brown sugar on top and caramelize carefully with a kitchen burner. (can also be baked in the oven short enough to harden the top layer if you put them in a fireproof dish). That’s the original recipe ๐Ÿ˜Š

I put them in decorative cups because they were polished and I melted the sugar with an ordinary long lighter and it came out perfectly.

Pinerls โฌ‡๏ธ
Required:
500 ml. Milk
1 fresh yeast
2 tablespoons sugar
1 tablespoon salt
10 tablespoons oil
About 1 kg. White flour
1/2 margarine
250 gr. Cheese

Preparation:
First, the yeast is dissolved in warm milk (of which 500 ml. Take a little) together with the sugar and salt.
Add flour (not whole), add lukewarm milk, dissolved yeast, oil, mix with a spoon, the mixture will be sticky, then gradually add the rest of the flour, knead a soft dough and leave it to rest for 30 minutes (it will double).

You get 6 equal balls. Mix them well to be soft. You twist them as much as 1 plate on occasion. Coat them nicely with margarine left at room temperature and put crushed cheese on top. Then roll it up and place it on baking paper (previously coated with margarine). Do the same procedure with the other 5 balls and arrange them one by one with a little space between them because they will grow in the baking.

Once they are all arranged, coat them again from above with margarine and 1 egg yolk with a brush. Add sesame seeds and cut all 6 rolls horizontally to come as cubes to bake better. Bake in a preheated oven at 180 ยฐ for about 30 minutes and you will see when they are nicely browned. Once they are ready, cover with a cloth for a few minutes and you can try it right away, the smell will make you ๐Ÿ˜Š

They are beautiful both hot and cold. I have made them before and I even froze them and after I thaw them they are soft again and their taste is the same ๐Ÿ˜Šโœ…

  • Only I am a perfectionist and I am not 100% satisfied with how my shape turned out, but the taste is phenomenal and that is why I decided to publish them and I suggest them with pleasure.

Ingredients needed for the dough:
๐Ÿฅฃ5 yolks
๐Ÿฅš3 eggs
๐Ÿš8 tablespoons sugar / 8 tablespoons oil
๐Ÿฅ›8 tablespoons milk
๐Ÿฅฃ7 tablespoons flour
๐Ÿฅฃ2 tablespoons cocoa
๐Ÿฅฃ1 baking powder

For foam:
๐Ÿฅš5 egg whites
๐Ÿฏ4 tablespoons honey
20120 ml. Water
20320 gr. Sugar (I would cut it to 200 g)
๐Ÿฅฃ1 sachet of gelatin

For glaze:
200 gr. Cooking chocolate
4 tablespoons oil

Preparation:
Dough โฌ‡๏ธ
Beat the 5 egg yolks with 3 whole eggs, add the sugar, beat for a few minutes, then add the oil and the milk and mix well, then gradually add the flour previously mixed with the cocoa and the pastry. Once nicely kneaded, put it on baking paper and bake in a preheated oven at 180 ยฐ for about 15 minutes. is enough. Then leave to cool and after it cools down with a glass, form circles (the size is your choice).

Foamโฌ‡๏ธ
Dissolve the gelatin according to the instructions and set aside. Put the honey, water and sugar in a small pot to boil, then reduce and leave to boil for a few more minutes. Set aside and add the gelatin to dissolve well.
Beat the egg whites well in solid snow, then gradually add the dissolved syrup with gelatin and mix well for about 10 minutes.
I suggest you put the mixture in a syringe and squeeze it on the circles in the middle so that it will form itself in a circle. I put it with a spoon, maybe that’s why the shape did not turn out as well as I imagined. Once you are done with all of them, leave them to dry at room temperature for 2 hours.

Glaze
Melt the chocolate with the oil. Place the cookies on a rack and sprinkle with chocolate.

Pasta Sauce

There are 1000 ways to prepare pasta, I believe that there is no one who does not like them, especially if they are combined with an extra light creamy sauce that you can not resist. (At least I personally love them that way) ๐Ÿ˜Š

If you have not tried a similar recipe or maybe you have ordered in a restaurant, now I will suggest you something extra fast, and you will be delighted with the taste and you will say to yourself, so this is not really something complicated.

  • Because I make them in two ways I will tell you the two varieties of sauce.

Ingredients needed for 2 people:

  1. Creamy mushroom sauce
    โ— 500 gr. Ravioli (I take them from cam, you have them stuffed with cheese, mushrooms or spinach). For this recipe I took it with cheese but it would also go well with mushrooms.
    โ— 500 ml. Hopla
    ะœะฐ Marinated mushrooms (I put about 1 hand)
    โ— 200 gr. grated yellow cheese
    โ— 3 wells
    โ— Smoked pechenitsa 3/4 pieces chopped to taste
    . Pepper and salt

Preparation:
Boil the pasta for about 10 minutes, meanwhile fry the mushrooms in a little butter, add the hops when it starts to boil, add the cheese, wells, pecans, salt and pepper to taste. Leave to boil with temporary stirring until the cheese melts well. Then add the squeezed ravioli to combine nicely with the sauce to boil and so it will thicken. When you serve them, you can add parmesan from above and enjoy the taste ๐Ÿ˜Š
(when hot sometimes the sauce looks liquid but as it cools it thickens)

  1. Sauce with 4 types of cheese:
    200 g yellow ice cream
    3/4 wells
    50 gr. Blue cheese
    30 gr. Parmesan
    It is prepared the same as the previous sauce. If you want, you can replace the wells with mozzarella 100g. ๐Ÿ˜Š

Pumpkin pie

I love the smell of pumpkin, it reminds me of something beautiful and takes me back to my childhood when my grandfather told us that pumpkin is our Macedonian banana and that remained in my memory.
My grandmother often prepared cabbage with pumpkin or smoothies and I am very glad that I continue her recipe with small changes ๐Ÿ˜Š

Required:
โ— 14 lists of ready crusts (in a package of 500 g there are 13 crusts, you can buy two packets and take them, or wrap the last 13th with the filling yourself) I took 2 packets and I had left over from the filling so I made and a smaller rotating pie.
โ— 700/800 gr. pumpkin
โ— 3 eggs
โ— 1 cup sugar
โ— 200 ml. oil
โ— 1 packet of pastries
โ— 1 packet of vanilla sugar
โ— 1 teaspoon cinnamon

Preparation:
Peel a squash, grate it and chop it into cubes. @ Delimano.mk (maybe grated).
Place in a frying pan or deeper bowl, add the sugar with a little oil and let it simmer with temporary stirring.
Meanwhile, beat the eggs, add the oil, the pastry, vanilla sugar and mix the cinnamon well.
Once the pumpkin filling has cooled well, add the egg mixture and combine.
Now it is the turn of the crusts ๐Ÿ˜Š
Take two crusts and on the second one put a lot of filling just horizontally along the crust at the bottom and fold it up like a roll.
Place the crust in a greased pan from wide to narrow and form a circle with all the other stuffed crusts until you reach the middle part. Feel free to shape it as you think it may not be twisted, just make them like strips, but this is how it is polished for me ั€ะตะดBefore baking, it is coated with oil.
Bake in a preheated oven at 180 ยฐ for about 30 minutes. If you see that the upper part blushes quickly, reduce it to 160 ยฐ. Because the crusts are thin, they burn faster, be careful ๐Ÿ‘
Once it is ready, cover it with a cloth and spray some water on the cloth. It is crunchy on top and the filling inside makes it juicy. Ideal!
Decorate with powdered sugar or cinnamon โœ…

  • Since I have a filling left, I made another smaller pie according to the same procedure.
