Leafy rolls

Just imagine the smell of freshly baked leafy rolls for good morning 😊
I have made different variants but this one is somehow the most perfect crunchy on the outside and soft as cotton on the inside so of course I recommend them Π’ΠΈ

Required ingredients:
3 eggs
20 gr. Dry yeast
3 cups oil
3 tablespoons sugar
2 teaspoons salt
Flour of about 1200 gr.
500 ml. Warm milk
For coating yolk and sesame
Margarine for coating

The yeast is added to a little lukewarm milk to combine.
Knead a soft dough from all the ingredients, cover and leave to double in a warm place.
It is then divided into 3 equal parts. 5 equal balls are formed from each part. Roll each ball and coat it with margarine (softened at room temperature). Arrange all the torn balls in the same way where they all coat and arrange them one on top of the other except the last one that will be on top. Put in nylon foil and put in the freezer.
The same procedure is done with the other two parts. After finishing all 3 parts, we take the first part of the freezer and break a large crust in the shape of a circle and cut it like a pizza of 8-16 parts, depending on how big you want your rolls to turn out, I sometimes cut them into 18 pieces. because I love them smaller.
Place the cheese on the outside (see right in the picture) and fold the right and left sides to slightly match the cheese (so that they can be folded better and not fall even when they are pressed).
Then gently fold them down and form rolls.
(IT IS VERY IMPORTANT THAT YOU DO NOT PRESS THEM WITH FORCE SO THAT YOU FALL OUT OF YOUR PERSONAL 😊)

Place them one by one on a greased baking sheet with margarine / butter (or on baking paper)
From above, gently coat them with egg yolk, put sesame seeds and a little margarine on each roll.
Bake in an already preheated oven at 180 degrees until browned and risen. πŸ₯

GΓΆzleme

Those who know me know how much I love Turkey as a country, this summer I tried this miracle for the first time and at first I thought it was a pancake but this is a traditional Turkish specialty called GΓΆzleme
And I am very happy that I succeeded from the first πŸ‘ŒπŸ‡ΉπŸ‡·

The recipe is explained through pictures, I saw it at @pomojvkus but I made small changes. However, the taste is much better when it is made at home οΈπŸ‘Œ οΈπŸ‘Œ
Ingredients needed:

For the dough:
● 500 gr. Flour
● 200 ml. Warm water
● 150 ml. Milk
. 1 tablespoon salt

For the filling:
About half a kilo of spinach
300 grams of cheese (I put sheep for a more intense taste)
150 gr. Cheese

Mix the flour with the salt, add the milk and water. Knead until you form a ball that is slightly sticky but still well processed. Cover with a cloth for about 20 minutes until you have prepared the filling.

Wash the spinach well and chop it finely, crush the cheese with a fork, grate the cheese, mix the whole mixture and mix.

Continue with the dough … Divide it into 10 equal parts and form balls. Cover all for about 30 minutes to exist.

After 30 minutes, the procedure is continued, one ball is taken and rolled on the floured surface, round shape as thin as possible. Then it is added from the filling (see in the pictures) and I added extra yellow cheese from above. They close from the top down and join by tapping the ends to close.
Prepared in this way, it is placed in a heated pan smeared with butter (and it does not have to) at a medium temperature, not too strong so that they do not burn at once.
Bake for about 3/4 minutes on both sides. All made in this way, they are placed one on top of the other and covered with a cloth for a few minutes. 😊 THAT’S ALL! GOOD APPETITE β™₯ ️

Cheese pie with ready-made crusts

Ingredients needed:
● 500 gr. Ready-made pie crusts
● Sheep cheese about 300 gr. plus or minus (can be anything but it’s better for me for meat things)
● For coating:
22 tablespoons soft flour
4 (small) cups of milk
2 (small) cups of oil
2/3 eggs
Half a packet of yeast
A little sugar and salt

In chopped or dry yeast, add a little lukewarm water, sugar and salt. When the yeast rises, mix it with the eggs, flour, milk and butter.
I mix this with a mixer or in Nutri Bullet so that there are no lumps. The liquid should be as thick as pancakes.

Preparation:
● Take one crust, coat it with the prepared liquid, put the second one on it, also coat it and put the cheese (previously crushed).
(Some people put filling on the third crust, but this way I get thinner)

Once you are done with the cheese, roll them up and arrange them on a greased baking tray or on baking paper one by one, or you can turn them like a pastry, it is your choice. After you are done with all the same procedure, they are nicely coated with the rest of the coating (I push them abundantly) I put sesame and that’s it 😊
Bake at 180 Β° for 30 to 40 minutes.

Closed pizza

Ingredients needed:
250 grams of flour
120 ml. lukewarm water
3-4 tablespoons olive oil
1/2 teaspoon salt
1 teaspoon sugar
1 sachet of dry yeast
For the filling: (of my choice)
I put ketchup (tomato puree) 100 ml.
Pieces of pechenitsa about 10 thinly chopped
70 gr. grated yellow ice cream
Feta cheese or mozzarella on occasion
80 gr. Blue cheese
Oregano
(You can also add olives, mushrooms, etc.)

Knead the dough from the first ingredients and leave it at room temperature for about 1 hour.
Then roll out a rectangular shape and coat it with ketchup, arrange all the other ingredients and finally the oregano.
Roll it carefully like a roll and place it in a pan lined with parchment paper. Brush the top with egg, add sesame seeds, oregano and bake in a preheated oven at 190 degrees for about half an hour.

American Pancakes

Required:
1 egg
1 glass of milk
1 1/2 flour
1 pastry

● Required ingredients:
πŸ₯₯150 gr. Coconut flour
πŸ₯₯1 liter of milk
πŸ₯₯300 gr. Sugar
πŸ₯₯100 gr. Butter
πŸ₯₯70 grams of density
20120 gr. Flour
πŸ₯₯4 tablespoons cocoa
πŸ₯₯1 sachet of vanilla sugar
50250 ml. Sweet sour cream or whipped cream.

● Preparation:

In a large baking dish, arrange the coconut flour nicely on all sides.

Boil the milk over medium heat and add the sugar, butter, thickener, flour, cocoa and vanilla sugar.
Boil it all until the mixture becomes thick like a pudding with constant stirring.
Then pour the same mixture slowly over the coconut, spreading it on all sides (you start from the beginning to the end) and then smooth it with a knife.
Once done, leave it in the fridge to cool for a few hours to curl better.

Meanwhile, whip the sweet cream or whipped cream and arrange on an already cooled base. Then cut strips look to the right of the picture there is a video and fold it like a roll carefully 😊

Granny’s “mekici”

Let’s start this blog of mine with my favorite mekici and this recipe is shared transmitted by my grandmother 🀍

● 1 glass of milk
● 1 cup of yogurt
● 1 yeast
● 1 pastry
● 2-3 eggs
● Flour 1 kg as needed

Procedure:
Beat the eggs with 1 tablespoon of sugar and 1 teaspoon of salt without a mixer. Add milk, yogurt, yeast and knead it all with flour.
Once the dough is well mixed, put it in an already greased bag (with oil) and leave it overnight in the refrigerator.
By the next day the dough will double. The next day, small balls are made, stretched with a greased hand about the size of a coffee tray and fried briefly on both sides.

That’s very easy even though it seems complicated and most important of EVERYTHING..REVICES! πŸ‘Œ

You can make half a dose and freeze the other.
